French green lentils also known as puy lentils. Puy lentils were originally grown in Puy France in the volcanic soil and has since spread to Italy and North America. Absolutely fantastic quality. I do suggest doing a traditional soak before using them, 1 cup lentils, 4 cups water, 1 tsp salt for 60 minutes. This loosens the skin and makes them tender but still maintain their shape while cooking instead of exploding. I tried just rinsing and cooking and then the soaking method. Soaking made an enormous difference. 100% worth the little extra effort.
